Quinoa Pilaf

I have been wanting to try this grain for a while. I have had it in several salads but not hot so I decided to try it as a pilaf. It was delicious! And the kids liked the taste and were not put off by the new texture (as I feared they might be).

Quinoa Pilaf

1 tbs olive oil

1 small onion, finely diced

1 clove garlic, minced

1 carrot, chopped fine

2 ribs celery, chopped fine

1 cup quinoa

1 1/2 cups broth, bullion or water (I used a cube of mushroom bullion)

Heat olive oil in a small sauce pan. Add onions and garlic and saute for a minute or two. Add the carrot and celery. Saute for about 5 minutes or until the onions begin to be translucent. Add the quinoa and stir to coat with the oil. Add broth and bring to a boil. Reduce heat to a simmer and cover. Cook until all liquid is absorbed about 12-15 minutes.

We were in such a rush to eat that I forgot to take a picture! But it was delicious!
